Well I think maybe it’s time to turn aside from relationship “stuff” for a bit and focus on more important matters – like FOOD! MAN-CHOW!! ~:?)) No matter what your overall situation you have to feed yourself from time to time and the frozen pizza and TV dinner route can only go on so long. So here’s a couple recipes I’ve put together over the last twenty something years of feeding myself. These pretty much follow the KISS principle (Keep It Simple Stupid) and require a minimum of time or effort to throw together; you can also add ingredients and play around with them pretty easily to get it to taste the way you like.
Chicken Cacciatore (kinda): (Crock pot)
2-3 pieces of chicken
1 can spaghetti sauce
1 lg green pepper
1 can mushrooms (drained)
(You can also add onion, black olives, leeks, zuccini or other items to taste)
Directions: Empty can of spaghetti sauce into crock pot; add mushrooms, cut up green pepper into 2 inch squares and add to crock pot, place chicken in crock pot. Put lid on crock pot and turn on medium setting. Allow to cook until chicken almost falls off the bone. (I don’t give a cooking time here because every crock pot is different – feel free to play with the settings and the time although the “high” setting will sometimes burn the sauce) When you are ready to serve remove the chicken and then ladle sauce over noodles, rice or mashed potatoes. Should make one to two meals (dinner and lunch for the next day)
This next meal I got from my brother who is single – very good eating here!
Italian Sloppy Joes (frying pan)
1 pound lean ground beef
1 pound ground Italian Sausage
1 Can Spaghetti sauce
½ pound mozzarella cheese
hoagie buns
Place ground beef and ground sausage in frying pan and cook until done.
Drain off excess grease, add Spaghetti Sauce to meat while stirring. You don’t want to add the whole can! Just enough to give it the consistency of sloppy Joes (about the same as oatmeal if that makes sense). When done turn off heat, and place a hoagie bun on a cookie sheet, sprinkle on some cheese and toast on broil until the cheese is melted. Add the meat/sauce mixture and you’ve got a kick-butt sandwich!! This will make enough for several meals.
